This is a new recipe I tried at the recommendation of my Ayurvedic health practitioner, Christina Vargas. I never liked kale, it has a weird texture for me. But this warm salad is AMAZING! So yummy and has such a great variety of flavors and textures. This is a tasty way to get your serving of greens in, give it a try and tell me what you think!
I’m usually cooking for just myself, so I modified this recipe to one serving. Find the original recipe here
2 handfuls of greens (I like 1 handful kale and 1 handful collard greens)
1 tsp coconut oil
1 TBSP tamari or Bragg’s amino acids
1-2 TBSP dry roasted sunflower seeds
Destem the kale and collard greens and tear into medium sized pieces
Heat the coconut oil in a small sauté pan
Add kale and collard greens and sauté until covered with oil
Add the amino acids and sunflower seeds. Stir to coat.
Serve and enjoy!
